This wine is made from very old vines (40 - 90 years old) with a low yield of 30hl/ha. The grapes are destemmed. Vatting lasts 35 days in wooden vats (truncated cone-shaped), with punching down of the cap and délestage, resulting in full-bodied, highly aromatic wines.
