Thirty-five-year-old vines offer all that maturity and experience can give. This wine is meticulously crafted in barrels (full vinification) and captures the know-how of our trade. Sustainable viticulture, hand-picked harvest with successive sorting, total destemming, barrel fermentation, frequent punching of the cap, vinification using ancestral methods, barrel ageing, ageing in new barrels, ageing on lees, clay-limestone soils.
