Harvested at night, each grape variety is vinified separately. The grapes are destemmed and crushed for skin maceration before pressing and settling at low temperature. Fermentation begins at a temperature of between 16° and 18°, lasting around 10 days. The blend is then determined by tasting to obtain the optimum balance. The wine is then filtered and bottled.
