From the Latin "rubrus", rubrum is the declension of the adjective meaning the color red. Referring to the emblematic red "terra rossa" soil found in coonawarra. The key to the quality of this wine lies in timing the flavors to harvest. We look for blackcurrant aromas, fine tannins and a light acidity that will eventually structure the wine and find the perfect balance. A year's ageing in oak will allow the wine to become more complex. 100% Cabernet Sauvignon. Conventional viticulture, hand-picked, fermentation in temperature-controlled stainless steel vats, aged in oak barrels, clay soils.
