In conversion to organic farming, hand-picked, unfiltered, use of sorting tables, total destemming, fermentation in thermo-regulated stainless steel vats, pre-fermentation cold maceration, ageing in new oak barrels, ageing in one-wine oak barrels, blending, traditional cork, clay soils, clay-gravel soils.
