Color: attractive, brilliant garnet red with copper highlights Smell: aromatic power and complexity on the bouquet, with notes of ripe red fruit (berries, cherries) and dark chocolate Taste: first arrives on the palate with unsuspected sweetness, then unfolds almost explosively its pure strength and fullness, the intense, concentrated fruit of the grape variety, the ripe, harmoniously integrated tannins, the fine toasty, spicy notes of oak, the elegant depth, the grapes from the old garnacha vines of the guardia miranda and botiguero vineyards were selectively harvested by hand from mid-September, at optimum aromatic and phenolic ripeness, destemmed in the vineyard, placed in small wooden vats and immediately transported to the winery. There, a three-day cold maceration concentrated the color and initial aromas of the berry skins, before the cellar master launched the 15-day fermentation at controlled temperatures of around 25°c. Once alcoholic fermentation was complete, the wine was transferred to Allier French oak barrels for malolactic fermentation, where it was aged for ten months. In January, it was gently racked, filtered and finally bottled as secastilla garnacha, to finish harmoniously during a further period of rest in the bottle. Allergene:enthält sulfite
