The late-ripening cariñena grapes were harvested from September 20, all crushed on arrival and fermented within a week in stainless steel tanks at controlled temperatures of around 26°c. After a total maceration time of eight to ten days (depending on the grape variety), the wines were removed from the must and aged for ten months in American and French oak barrels.
