The winemaker

In 2006, Christophe decided to follow in his family's footsteps (his uncle was an oenologist in the Loire region) and become a wine producer, not in France but in Spain, where he has lived since 1986. Through his collaboration with César de la bodega Langa, the oldest bodega in Calatayud (150 years old), he created his Chapillon brand of wines and at the same time selected estates with the same family philosophy. Christophe Chapillon and César Langa select their vines over 40 years old (the oldest around 85 years), at altitudes of between 800 and 950 metres above sea level, in search of freshness in their cuvées. The vineyard, which is farmed organically, is planted with the traditional Calatayud grape, Consejon, but also Garnacha, Cabernet Sauvignon and Syrah for our red wines, and Chardonnay & Macabeo for our Cava Premium, the only DO Caltayud cava in Spain.
