To make its wines, Bodegas olarra only uses fruit that meets a series of strict conditions: impeccable hygienic status, low production, ideal ripeness, etc. Before entering the estate, a new selection procedure is implemented to recognize and separate the different grape qualities. This process enables us to determine more than 25 analytical parameters linked to the ripeness and hygiene of the fruit.
