The wild plants harvested for this gin are native to Ireland. After picking, the plants are quickly brought to the distillery to capture their intrinsic nature, the very essence of these mountains. The plants are conscientiously and slowly distilled to extract their delicate flavors, in small batches of less than 250 liters.
