Raphaël saint-cyr took over the domaine from his father, Thierry, comprising 23 ha of vines in the Beaujolais, Chénas, Morgon and Moulin-à-vent appellations. These Beaujolais vines have been farmed organically using biodynamic practices since 2008. The estate is run with the utmost respect for the soil, plants and wildlife, and this is the guiding principle behind every intervention in the vineyard. In the cellar, Raphaël pursues this approach through natural, input-free vinification. This high regard for the terroir produces authentic wines in Beaujolais, Chénas, Morgon, Moulin-à-Vent and other vintages yet to be discovered. Vinification is all natural, with no inputs. Beaujolais carbonic maceration is a method that best respects the typicity of terroirs and the raw material: the grapes. Carbonic maceration was widely used in ancient times. It consists in keeping the grapes whole until pressing, while minimizing the extraction of juice by compacting them in the vat or by other crushing processes. The estate chills all the grapes in a refrigerated truck beforehand, to ensure that the grapes reach their full maturity.
