Produced in the Provencal tradition, vin cuit is a natural sweet wine cooked in a copper cauldron over a wood fire for 12 hours, then forgotten in oak barrels for several years. The diversity of its aromas shows its youth, but the slow, steady work of cooking over a wood fire gives it smoky, quince notes. Over time, it evolves towards sweeter candied fruit flavors. Emblematic of the Christmas season, it is the ideal accompaniment to 13 Provençal desserts, but can also be served with foie gras or cheese.
