In a few words ...

Obtained either by pressing or bleeding, and after 24 hours of settling, the grape juice begins fermentation in 228-liter barrels. Maturation takes place when the remaining sugar content reaches 90 g/liter. The neutral alcohol used for mutage is 96% Vol. to stop fermentation. Aging lasts around 38 months in barrels, hence the name "ambré".
