In a few words ...

Viticulture: The vines are single Guyot pruned. They are cultivated using organic and biodynamic methods. Harvesting: "X" is made from 15-year-old vines. Average yield: 35 hl/ha. The grapes are harvested by hand in 25 kg crates, then sorted on a sorting table. It is then de-stemmed and conveyed by conveyor belts, for maximum respect of the fruit, to the vinification vats. Vinification : Natural vinification, fermentation with indigenous yeasts. Cellar work follows the lunar calendar. Cold pre-fermentation maceration lasts about 8 days, before fermentation begins. Light punching of the cap is carried out during this period. Vatting time varies from three to five weeks, depending on the vintage. Devatting is carried out using a conveyor belt, followed by light pressing. Next comes malolactic fermentation and ageing, which takes place in barrels for around twelve months.

Appearance

The color is a deep, intense ruby red.

Aroma

The reds illustrate the virtues of Pinot Noir. They offer a cherry and morello cherry bouquet.
