With its full-bodied, spicy palate, this Champagne is expressive and characteristic of Pinot Noir from the southern regions of Champagne. The grapes are always hand-picked, plot by plot, at the ideal degree of ripeness. After gentle pressing, the must is analyzed and transferred to stainless steel tanks for the first fermentation. Then comes the most important stage: blending. The cuvée is always composed of several vintages whose characteristics are meticulously catalogued by the oenologists and harmonized with each other to obtain the ideal result. The use of several vintages smoothes out variations in quality and guarantees a consistently high standard. After blending, the wine is bottled, where a yeast deposit ensures a second fermentation that refines the champagne's taste and complexity. It is during the fermentation process that carbon dioxide is formed, responsible for the champagne's sparkle. Once the yeast has done its job, the sediment can be removed. The bottles are tilted, neck down, until all residue has settled in the neck. The necks are then frozen and the bottles are opened in an upright position, allowing the residue to be expelled from the bottle under pressure.
