Light yellow with fine perlage. The bouquet develops aromas of exotic fruits and floral notes. On the palate, it is elegant, powerful and very refined. The finish is pleasantly fresh. The grapes are harvested at their ideal ripeness and pressed separately and gently for each variety. The must is pumped into stainless steel vats, and the first fermentation takes place at controlled temperatures. The young wines are then analyzed and the oenologists create the best possible cuvée from each grape variety. The cuvée is then bottled with natural yeasts, in which a second fermentation takes place. It is during this fermentation that carbon dioxide is formed. Finally, the bottles are filled by dosage. The dosage determines the amount of residual sugar in the champagne, since all the sugar already present in the bottles has been transformed during fermentation. The family firm g.h. Martel & co. has owned vineyards in the prestigious Champagne region since 1869. At present, the estate comprises around 100 hectares of vines planted with the three grape varieties pinot noir, pinot meunier and chardonnay.
