    In a few words ...

    Assembly : 55% cabernet sauvignon - 36% merlot - 8% cabernet franc - 1% petit verdot. vinification : hand-picked in small crates. Biodynamic cultivation. Whole-berry vinification in small wooden vats at 28°c, extraction by manual punching down. During vatting, the grapes are cooled, allowing them to macerate before fermentation, in an aqueous phase conducive to the exchange of color and aromas. Fermentation begins naturally with the vatyard's indigenous yeasts. The wines are aged for 18 months in barrels on lees (60% new wood from the integrated cooperage). TASTING : A brilliant dark red color. A nose revealing very fresh notes of ripe red fruit (cherry, raspberry...) and attractive spicy notes. Well-balanced on the palate, with good concentration, substance, maturity and silky tannins. The style of the red wine is very classic, with a fine expression of the Günzian gravel terroir that gives unique smoky notes. We seek elegance and structure, freshness and complexity, balance and richness.

    Appearance

    The wines have a dense but lighter robe than the medoc. The hue is ruby ​​with a touch ranging from purple to brick depending on the evolution.

    Aroma

    The bouquet is often fruity, with currant and other red and black fruits to which are added smoked or roasted notes.

    Taste

    Composed on average of 50% Merlot and 50% Cabernet Sauvignon, the red wines of Pessac-Léognan make a good compromise between marked tannins and the greediness of the fruit. We thus find red and ripe fruits, and empyreumatic notes.
