It was philippe bardet who revealed the full potential of a few hectares of saint-emilion land in the commune of saint vignonet. Having been brought up to respect the river and its environment, he has the utmost respect for nature, and this is reflected in the way he tends the vines. He attaches great importance to maintaining biodiversity, preferring to let insects do their work and the earth feed itself rather than use pesticides and fertilizers. He also admits that it took him some time to understand the balance of the vine. "Fresh out of school, I thought I knew everything, and it took me 10 years to acquire modesty and experience. Today, I'm more respectful of the terroir, more of a shepherd than a hunter". And not content with having considerably improved production conditions, he has optimized them by developing a mechanical sorting technique derived from fruit growing, grain by grain, for his Merlot and Cabernet. Château du val d'or is also the work of three generations, from Philippe Bardet's father himself to his son, who is about to take over the running of the estate. These differences in culture and approach are the very essence of the wine's complexity, and it is through tasting and sharing that the estate's know-how is passed on. The grapes are vinified in the traditional way: natural alcoholic fermentation, long vatting, pumping over twice a day. The vinification vats are stainless steel with temperature control. Gravelly
