"L'entremetteuse" is not only a conduit for emotions, but also a link between winemaker and connoisseur: In this small, human-scale establishment, where patience is the order of the day and meticulousness an obsession, the grapes (harvested by hand) are selected from the best sources (Lolol, Apalta, Paredones...), with a ruthless sorting process, and then vinified with the strictest respect for the fruit (no pumping or filtration), with no additions except the necessary pinch of sulfur.
