Color: warm, brilliant ruby red Odor: fragrant bouquet of red and black fruits (forest berries, blueberries, cherries), also reminiscent of figs and a hint of cinnamon, on a background of dried Mediterranean herbs such as thyme, lavender and well-integrated, slightly spicy oaky, toasty notes (thanks to the light toasting of the barrels) Taste: silky on the palate with gently ripe tannins and warm fullness, medium body, very elegant with a good balance of red and black fruits, juicy acidity and fine spices, long finish with lovely freshness in montes à apalta vineyards, the vines grow on terraces or steep slopes. As in the northern Rhône, they are tied to stakes, but with an unusually high planting density. Perfectly adapted to the climatic conditions, the southern grape varieties carignan, grenache and mourvèdre thrive in both heat and drought. In fact, they need it to ripen nicely and soften their powerful tannins and racy acidity (mourvèdre, carignan). The high density of planting, combined with inhospitable, poor soils that are difficult to root, means that the vigor of the vines can be controlled, thus ensuring natural growth control. The vines concentrate on the essentials, so to speak, and produce low yields of high quality. The sometimes heavy rains would normally have washed away the soil beneath the vine shoots. However, the work carried out in the vineyards also includes soil cover plants, planted between the rows of vines and capable of completely absorbing water. As well as protecting against erosion, the grass cover also acts as a sporting competitor for nutrients and thus as another natural yield control. From the end of March, the grapes are delicately harvested by hand, immediately transported to the winery and fermented separately according to grape variety and plot. Montes ages forty percent of the wines for twelve months in new French oak barrels. Then, all batches are re-cut to form the outer limits cgm 'final blend', bottled and, after some rest in the bottle, released for the trade. Allergene:enthält sulfite
