Color: bright, pale straw yellow with greenish highlights Smell: the bouquet blends intense, juicy citrus aromas with slightly spicy notes of yellow bell pepper and a hint of chili pepper, typical of elqui-sauvignon Taste: very fresh on the palate, complex and lively, with racy acidity, clear minerality and a long, fruity, aromatic finish the grapes for cordillera sauvignon blanc monocépage de torres were harvested in March and immediately transported to the winery, where they were first cold-macerated for three hours, then slowly fermented at controlled cool temperatures of around 15 to 16°c for 19 days. In order to preserve as much as possible their characteristic fruitiness, as typical of the origin as of the grape variety, and their lively freshness, the wines were not put into oak barrels after alcoholic fermentation, but were aged only in stainless steel tanks and in the bottle.
