"côte de nuits-villages: quality and respect for the environment domaine r.dubois et fils comprises 0.77 hectares under the côte de nuits-villages appellation. This parcel is 100% Chardonnay, like all the great Burgundy appellations. These vines were planted in 1995 and grow on very stony clay-limestone soil, from which very hard limestone is extracted for the production of Comblanchien marble. Maison dubois practices integrated vinegrowing, with manual leaf thinning and minimum chemical treatment, with the utmost respect for the environment and the terroir. The grapes are harvested by hand in the traditional way. The bunches are then meticulously selected to extract a quality juice, which is placed in a settling tank before being transferred to barrels and fermentation tanks. After 10 days of fermentation, the wines spend almost 12 months in oak barrels before finally being bottled. This natural ageing produces a côte de nuits-villages whose quality is recognized by the nuiton winemakers. domaine r.dubois et fils côte de nuits-villages blanc 2015: a long, honeyed structure this domaine r.dubois et fils côte de nuits-villages blanc 2015 has a straw-yellow color with magnificent golden highlights. The still slightly closed nose of this fairly young wine will reveal, after aeration, soft, promising aromas of summer fruits such as peach and apricot, with some more exotic notes tending towards woody scents. On the palate, this wine has a rather frank attack and a well-balanced structure where acidity quickly gives way to a long, honeyed, unforgettable touch. This promising wine has many years ahead of it, with its hint of menthol just waiting to develop."
