Whole harvest, Fermentation in thermo-regulated stainless steel tanks, Use of selected yeasts, Malolactic fermentation, Traditional vinification. Blending, Traditional corking, Aging on laths for 3 to 4 years before disgorging. The grape varieties are 45% Pinot noir, 45% Pinot meunier and 10% Chardonnay.
