In a few words ...

Assembly pinot noir (33%)pinot meunier (33%)chardonnay (33%) vinification Once harvested, the grapes are quickly and gently pressed. A first settling is carried out at the pressing center, followed by a second in our winery, at cold temperature (6°c), for 24 hours. Alcoholic fermentation takes place at low temperature (18°c) in temperature-controlled stainless steel vats, where grape varieties and crus are vinified separately before final blending. Malolactic fermentation is carried out on all our wines. After tasting, blending and bottling, the wine is aged in our cool, 33-meter-deep cellars. Each bottle is stirred by hand in the traditional way, before disgorging and dosage. The wines then rest for a minimum of three months before being shipped. tasting The nose is frank, elegant and full-bodied, blending generous notes of dried fruit with heady floral fragrances and seductive woody scents teased by a discreet vegetal touch, before a light spicy caress and eloquent sweet scents appear. From the outset, full, powerful and complex, the wine surprises with its generosity and presence, its suppleness and balance. Its pleasant vivacity highlights succulent fruity flavors and sweet, sensual spicy notes. The well-presented sugar harmonizes with the whole and does not detract from its expression. Rich with lovely hints of blond caramel that prolong its intensity, the finish is astonishingly long and remarkably fresh.
