Domaine Achillée is located in Scherwiller, a superb wine-growing village in the heart of the Alsace wine route. The estate covers 18 hectares of vines and 6 hectares of fruit trees (cherries, plums and mirabelles). The estate came into being in 2016. Yves Dietrich, then a cooperator in Alsace, decided to become independent and set up his own domaine with his two sons, Pierre and Jean. Yves will be in charge of the vines, jean will be in charge of vinification and pierre will be in charge of distribution. The estate has been run using organic methods (ecocert) since 1999 and biodynamic methods (demeter) since 2003. And why yarrow? Yarrow (pronounced akilé) is a plant used in biodynamic preparations to regulate potassium intake. Domaine Achillée's Cuvée Hespéride is made from a 7-day maceration of Gewurztraminer grapes. This wine is a blend of two vintages, 2020 and 2021. The nose reveals delicious notes of candied pineapple, turmeric, sweet curry, candied citrus, exotic fruit and a hint of smoke. The palate is full-bodied and rich, thanks to a fine balance between the richness of the grapes and the intensity of the flavors.
