Color: deep, brilliant garnet red Odor: on the bouquet, delicious aromas of fresh red berries from the woods, underscored by a hint of walnut, vanilla and the delicately toasted notes of oak Taste: also fruity on the palate, juicy, round and harmonious, supported by elegantly structured tannins, beautifully accessible with good length the cabernet sauvignon and merlot grapes for château briot's cuvée rouge are harvested at optimum maturity in the early hours of the morning, still cool, and the grapes are first cold crushed for 24 to 48 hours to concentrate the initial aromas, color pigments and tannins of the berry skins. The must is then heated to 26°C, allowing temperature-controlled fermentation to begin in stainless steel tanks. Once alcoholic fermentation is complete, the temperature is further raised to 30°C for the three weeks of maceration and gentle extraction that follow. The wines are then gently pressed, the free-run wine and the press wine are separated and transferred back to stainless steel tanks for malolactic fermentation at a controlled temperature of around 18°c. The wines are aged partly in stainless-steel vats, partly in barrels, to preserve the subtle balance between juicy fruit and delicate oak spices, characteristic of Château Briot.
