Domaine chibaou - cabernet sauvignon de chibaou 2019domaine chibaou is located in saint-félix-de-foncaude in the bordeaux wine region. The winery has been in existence since the early 1900s, created by christophe rebillon's grandfather. When he returned to the estate in 2005 after working in the Languedoc region and the United States, he had 40 hectares under cooperative management. He bought four vats, a small press and a pump, and made his first wine, château grenet 2005, which won a prize at the Bordeaux competition. Gradually, he expanded the winery and decided to go organic from 2008. In 2011, the Cave Coopérative no longer exists, and the 40 hectares are vinified in saint-félix-de-foncaude. The estate comprises three chateaux: château grenet (the historic one, on the clay-limestone slopes of castelviel), château beyran (some twenty hectares, but mainly the winery, offices and the house où christophe grandi) and château fontaine fleury saint laurent du bois (purchased in 2016 to develop a new business). The entire vineyard is certified organic. This cuvée is made from Cabernet Sauvignon. After a mechanical harvest, the grapes are sorted and vinified in stainless steel vats, with low-temperature fermentation and a long maceration.
