The former canton of Sauveterre was the most important in terms of AOC Bordeaux viticulture. All the colors of the appellation were represented. Today, alongside traditional production, a new generation of growers is producing somewhat atypical wines. Wines which, for the most part, have nothing in common with Bordeaux except for their colors. Clos de la Molénie, in Ruch, has adopted this approach. Its cuvée pas de la colline, a vin de france, was awarded a coup de cœur by the jury of the atypical wines competition during sauveterre fête ses vins. sylvain destrieux created clos de la molénie in 2015, opting for an organic and biodynamic approach to viticulture. Five years later, his first bottles of organic production are rolling out of the winery. Cuvée pas de la colline is one of them. It's a white wine made from 100% Sauvignon Blanc grapes, whose particularity lies in the ripeness at which the berries are harvested. "We don't take maturity samples.
