The winemaker

In the Bordeaux region, the heart of the Côtes de Bourg, the Chateau Haut Maco, succession 3 generations is now the work of two brothers, Jean and Bernard Mallet. Combining technology and tradition throughout the growing season, the vines and the soil is worked to produce less and better. At Chateau Haut Maco, modernity is at the service of nature. The property is divided into 73 plots analyzed (soil and sub-soil). These analytical information used to balance each plot by contributions (humus) or deletions of mineral elements (weed). This natural balance is maintained over the years. Interpretation of the data from a weather station installed on the property to intervene for curative treatments rather than preventive as before. This method called "integrated pest management", limit the use of phytosanitary products to its strict necessity and thus respect the fauna of the vine and its environment.
