Do you need to own hectares of vines to express your talent as a winemaker? Especially in a Champagne region where land remains unaffordable... Benoît doussot proves the contrary. Having started out without a plot of land at the age of 24, this young man has nevertheless established himself as one of the most talented winemakers of his generation. His project? Carefully purchase organic or in-conversion organic grapes, exclusively from the Côte des Bar region, essentially from Kimmeridgian marls, to chisel out sincere, non-dosed, highly flavorful champagnes. To discover, two pinots noirs: boréal (north-facing plots) and austral (south-facing plots), as well as two chardonnays, les grandes lignes (south-facing Portlandian limestone) and les revers (north-facing plots). His father-in-law, Bertrand Gautherot, of the emblematic vouette and sorbée, is a great source of advice. Domaine Clandestin's cuvée les grandes lignes comes from Chardonnay vines planted on the Côte des Bar in Buxières-sur-Arce, facing south at an altitude of 234 meters. High planting density, light clay soils and limestone subsoils. Spontaneous fermentation with indigenous yeasts, aged in 350- and 600-year-old barrels.
