Together, these stages ensure the delicate extraction of aromas, color and the silkiest tannins. To obtain a pleasant, fruity wine, most of the aging is carried out in vats. This preserves the red fruit aromas of Grenache Noir. Barrels structure Syrah, Mourvèdre and the best Grenache lots, adding length and fullness.
