In a few words ...
Lovely mineral character. Direct pressing as soon as the grapes arrive at the press, alcoholic and malolactic fermentation, with no added sulfur, from arrival in the cellar to bottling. The juices ferment slowly without any input in concrete tiled vats. They ferment to around 12% vol. and are kept on the lees for 15-20 months without added sulfur.
