In a few words ...
As soon as they arrive in the cellar, "little hands" place the bunches selected in the vineyard on a vibrating table, where a second, very rigorous sorting takes place. The grapes are destemmed and then sorted again. Fermentation in concrete vats. Tasting determines the operations to be carried out daily. Ten or so punch-downs for gentle extraction. Reassembly. Malolactic fermentation in French oak barrels. 50% aged for 10 months in French oak barrels and 50% in foudres.

The very fresh, precise nose opens with a complex palette of elderflower and black fruit. It then develops scents of fresh blackcurrant and licorice. The discreet woodiness is very well integrated.
