A second bouquet of jammy fruit and licorice takes over, blending admirably with a round, powerful structure on the palate... 80% mourvèdre, 20% grenache. Organic viticulture, manual harvest, fermentation in stainless steel vats, classic vinification, total destemming, crushing, traditional corking, ageing in French barrels, ageing in new oak barrels, siliceous soils (sand, gravel...), schistous soils.
