Various sources report that, in 1547, a deed passed before a notary concerned a parcel of vines of one eminée located "ad montem oliveti", but it wasn't until the beginning of the 20th century that the history of the sabon family and this locality were linked. Séraphin sabon, originally from the neighboring village of sérignan du comtat, married marie, daughter of romain jausset, a landowner in châteauneuf-du-pape. In 1932, he created the "clos du mont-olivet". The estate then passed into the hands of Joseph, Seraphin's eldest son. Today, joseph's grandchildren céline, david and thierry manage it. The estate covers 21 hectares of Châteauneuf-du-Pape, 14 hectares of Lirac, 10 hectares of Côtes-du-Rhône and 3 hectares of Vin de Pays du Gard. The AOC Châteauneuf-du-Pape parcels are highly fragmented, from "palestor" in the north, to "chemin de sorgues", "les marines", "le moulin à vent", "les parrans", "les cabanes", "la font du pape", "coste froide", "les blachières", "bois seneseau", "montalivet", "la crau", "les bousquets", "pied de baud" and "bois dauphin". Exposures, mesoclimates and soils are highly varied

Châteauneuf-du-Pape
The appellation Châteauneuf-du-Pape is part of the region of Vallée du Rhône from France which include Clos Du Mont-olivet and its 11 cuvées. Spread over The Rhone Valley and its rich, complex terroirs. The region is divided into two distinct subregions: Northern Rhone (known as Rhône Septentrional) and Southern Rhone (Rhône Méridional). In the former we find strong wines in beautiful colours with warm, spicy notes, produced by vineyards that stretch 4,700 ha along the Rhone. The latter, with an area of 71,000 ha, is much more important, and this is evident of course in its annual production of red, rosé and white wines quite unlike those of the Northern Rhone., this region is 3 million hectolitres per year of red wines, rosés, dry and sparkling white wines, and natural sweet wine..
