In a few words ...
The grapes are harvested very early in the morning to avoid oxidation and for the practical purpose of temperature control. The grapes are then destemmed and crushed before being sent to the press. The extracted must is cold-settled, and the fermentation phase begins at a very low temperature to preserve all its aromas. The wine is aged in vats for 5 to 6 months before bottling.

Appearance
Light golden yellow color, golden highlights, crystalline.
Aroma
First nose of cooked fruit (apple), and fruit in alcohol (corynthus grapes), on a honeyed background (acacia).

Smooth, evolving on cooked fruit (apple) and honey. Light, slightly alcoholic (10% vol.).
