Mukhrani Castle - saperavi 2014The Mukhrani Castle is located in the Mukhrani region of Georgia. In 1512, the mukhrani castle became the estate of the prince of the ruling Bagrationi royal family. Mukhranian wine production was established by ivane mukhranbatoni, a famous representative of the royal family and a political and public figure of the 19th century. During the Soviet era, the Mukhrani castle was abandoned and almost destroyed. In 2002, a group of businessmen, frederik paulsen, mamuka khazaradze and badri japaridze, embarked on a project to restore the mukhrani castle. The group's aim was to restore the estate to its former glory and re-establish mukhrani production, combining modern and traditional technologies. Since 2007, the mukhrani winery has been making wine from local and international endemic grapes harvested from its own 102-hectare vineyard.The wine is made with saperavi, a dark-skinned, pink-fleshed grape variety native to Georgia. After careful hand-picking to achieve the highest fruit quality, the grapes are picked and fermentation begins. Extraction is carried out using pigeage, remontage and délestage techniques. Malolactic fermentation takes place 7-8 months after alcoholic fermentation. The juice is fractionated and blended for the final style, and 20% of the blend is transferred to French, American and Caucasian oak barrels. Once mature enough, the wine from the barrels is transferred to its other part for bottling.cépage: 100% saperavi
