In a few words ...
Cold skin maceration, then fermentation of free-run juice only at 18 degrees Celsius. Aged in stainless steel tanks on fine lees, bottled early in February of the year following harvest. At the Domaine, we serve it chilled (between 6° and 8°) as an aperitif all year round.
