Blend : 100% pinot noir. vinification : severe sorting in the winery, whole berries de-stemmed by gravity; enzyming, yeasting, one-week pre-fermentation cold maceration, daily punching down, final hot maceration. Vatting for 3 weeks. Manual devatting using gravity tanks in the stainless steel pneumatic press. TASTING : A dense, sustained color, the freshness and intensity of its fruit charms us from its youth. As the years go by, the palate becomes fuller and silkier. The fruit evolves towards macerated cherry, stone, licorice and fine balsamic scents, as well as very fine animal nuances.
