    In a few words ...

    Fabulous rosé color with violet highlights. The bouquet is complex, with nuances of berries, raspberries and blackcurrants. The same aromas are found on the palate, combined with pleasant freshness and fine perlage. The finish is persistent. The grapes are always hand-picked, plot by plot, at the ideal degree of ripeness. After gentle pressing, the must is analyzed and transferred to stainless steel tanks for the first fermentation. Then comes the most important stage: blending. The characteristics of two or three vintages are meticulously recorded by the oenologists and adjusted to each other to create the ideal cuvée. After blending, the wine is bottled, where a yeast deposit ensures a second fermentation that refines the champagne's taste and complexity. It is during the fermentation process that the carbon dioxide responsible for champagne's sparkle is formed. Once the yeast has done its job, the sediment can be removed. Bottles are tilted and turned with the neck downwards until all residue has settled in the neck. The necks are then frozen and the bottles are opened in an upright position, allowing the residue to be expelled from the bottle under pressure. The bottle is then filled with 15% reserve wine and closed for sale. maison alexandre bonnet is a traditional champagne house in les riceys, now part of the lanson-bbc group. The company's own Pinot Noir vineyards cover 45 ha, grouped around the village of Les Riceys. For the other grape varieties, there are long-term contracts with growers who guarantee the quality of the grapes. It was in 1934 that Lucien Noble, an ancestor of the Bonnet family, planted the first vines in Les Riceys.
