Harvesting method: mechanical, very early in the morning to ensure a fresh harvest. Vinification: pneumatic pressing immediately after harvesting, static cold settling 24 hours later, low-temperature fermentation, ageing on fine lees, stabilization, clarification, bottling in spring. Pineau d'Aunis is the oldest grape variety in the Loire.
