In a few words ...

A lovely salmon color in the glass. The bouquet is aromatic and intense with red berries such as blackcurrant. On the palate, it's elegant and fine, with fine perlage. A lingering finish! The grapes are harvested at their ideal ripeness and gently pressed separately for each variety. To obtain the champagne's pinkish hue, the skins remain on the must until the desired hue is reached. The must is then pumped into stainless steel tanks, and the first fermentation takes place at controlled temperatures. The young wines are then analyzed and the oenologists create the best possible cuvée from the grape varieties. The cuvée is then bottled with natural yeasts, in which a second fermentation takes place. It is during this fermentation that carbon dioxide is formed. Finally, the bottles are filled by dosage. The dosage determines the amount of residual sugar in the champagne, since all the sugar already present in the bottles has been transformed during fermentation. The family firm g.h. Martel & co. has owned vineyards in the prestigious Champagne region since 1869. At present, the estate comprises around 100 hectares of vines planted with the three grape varieties pinot noir, pinot meunier and chardonnay.
