Most of the grapes are chilled in a cold room and lightly "crushed" under these refrigerated conditions. Maceration on the skins for 35 days. Fermentation in vats with regular pumping-over. The 15% of grapes left whole are used to drain the wine. Malolactic fermentation in barrels. Regular stirring for three months.
