In a few words ...
Hand-picked in 500 kg bins, bunches selected in the vineyard during harvest and berries selected in the cellar during pressing. De-stemming and pressing under o2 protection. Maceration in the press (4-12 hours), and static cold settling for 48 hours. Gravity pumping-over and long fermentation with indigenous yeasts developed in a vineyard tank. Fermentation takes place at a controlled temperature of 15-18ºc, with constant movement of the fine lees.
