In a few words ...

Sylvain pataille is one of the most ardent defenders of the marsannay and chenôve terroirs, with the little-known clos du chapitre, located at the gateway to the Dijon urban area. Organic since 2008, the 17-hectare estate lost its certification in 2016 following the use of a prohibited treatment, a painful choice to save the few remaining grapes. Demanding, the winegrower works his vines with a horse, intervenes as little as possible, keeps a proportion of whole grapes and makes a point of ageing his wines for a long time, sometimes more than two years, almost without sulfur. The wines are sincere, endearing and full of vitality; they deserve to be discovered more fully, especially his wonderful Aligotés. The cuvée fleur de pinot from domaine sylvain pataille is a very special rosé with the allure of a great white wine. In 2002, Sylvain had the idea of creating a rosé for laying down. Powerful yet light, delicious yet well-structured, this cuvée fleur de pinot is a must-have. It's a selection of old pinot vines planted on the limestone soils of "la charme aux prêtres".
