Harvesting is carried out by hand, and the grapes are picked in crates, which means they are carefully sorted. As in Burgundy, the entire harvest is de-stemmed before vatting. This is followed by a slow, low-temperature start to fermentation using indigenous yeasts. Fermentation is long, to extract maximum color and tannin from the grapes. The wine is aged for 9 months, half in small tuns and half in barrels.

A complex, robust nose with aromas of cherry, blackberry and liquorice.
