In a few words ...
Native yeasts, vinified without sulfur with light pumping over. 1st vintage of organic conversion. Short 10-day vatting for low extraction and plenty of finesse and elegance. Vinified in old oak barrels for 8 months to bring roundness to this summer wine. A minimal dose of sulfur is added at bottling to stabilize the wine.
