In 2013, cellar master dominique demarville decided to create a blend composed solely of reserve wines, in order to express the quintessence of brut carte jaune, paying tribute to madame clicquot and this innovative, visionary approach. This is how cuvee extra brut extra old was created, a resolutely innovative champagne. Extra brut extra old 2 is composed of reserve wines from the 1990, 1998, 1999, 2006, 2008, 2009, 2010 and 2012 harvests. These reserve wines have been aged for a minimum of 2 years in vats before being selected for their freshness and aromatic complexity. l�assemblage brings together some twenty crus from all over the champagne region (montagne de reims, cote des bar, cote des blancs, vallee de la marne et de l�ardre, massif de saint thierry). the cuvee is based on the region's 3 grape varieties: 45% pinot noir, 27% chardonnay and 28% meunier, chosen from the collection of reserve wines. after fermentation, the wines are matured for at least three more years in the house chalk rooms to perfect their aromatic balance; thanks to the richness and unctuousness of the reserve wines, the blending of extra old 2 extra brut requires only a very low dosage (3 g/l sugar). The resulting champagne presents a remarkable balance of fra�cheur and complexity, with an ageing potential of over ten years.
