In a few words ...
Harvested at optimum sugar-acidity balance, destemming of grapes followed by vatting and immediate yeasting. Traditional fermentation at 25°c and maceration for 7 days with one short pumping-over per day. Short post-fermentation maceration of 4 to 6 days, followed by malolactic fermentation. After 3 months' ageing on fine lees, the wines are filtered and bottled. 100% Syrah. In conversion to organic farming, night harvest, use of sorting tables, fermentation in stainless steel vats, use of indigenous yeasts, classic vinification, clay-limestone soils, pebbly soils.
