In a few words ...
Stemming from the exceptional south-facing schistose and sandstone "la roche" terroir, the 2004 Chenin harvest was carried out by hand in 4 successive sortings over 1.08ha to select only botrytized grapes. The balance between sugar and acidity is the objective of this cuvée. At the end of fermentation, the wine is aged on fine lees for several days to enhance the expression of aromas and contribute to the wine's fatness. No wood aging to preserve the purity of chenin and its minerality. 100% chenin. Hand-harvested and botrytized, fermentation in temperature-controlled stainless steel vats, regular stirring of the lees, schistose soils.
